Lately I’ve been trying to eat a healthy breakfast every day. Don’t get me wrong, breakfast is my favorite meal. Ever. But it’s very easy to get in the habit of not eating anything in the morning because you don’t have time to spare before heading in to work. So recently I’ve invested in some protein powder and I’ve been making quick and easy protein shakes (more on that in a future post). I usually add banana and so I went digging for more banana breakfast recipes and came up with these 3 ingredient banana pancakes:
– Mash 1 1/2 bananas in a bowl with a fork
– Whisk 2 eggs in a separate bowl and add 1/8 teaspoon baking powder
– Mix the eggs into the bananas and fry in melted butter over medium-low heat. Serve with fresh fruit or a fried egg and bacon.
The mixture seems really goopy when you put it together, but trust me, they come out alright. Each pancake should be about 2 Tablespoons (they are mini) so you are still able to flip them easily. You end up with about seven mini pancakes. I wasn’t sure what to expect with this recipe, but they came out tasting pretty good. They definitely aren’t fluffy like a traditional pancake, but I’m a sucker for bananas and a more custard-y texture and so I really liked them. And they’re Paleo and Gluten Free to boot!
