With my busy summer schedule officially underway, I’ve been having trouble finding time to set aside for cooking/meal prep. Even when I do find time, it’s so hot in my apartment no part of me wants to turn on the stove. Even more heat? I already have a sweat mustache five minutes post shower. Bleh.
When I was out running errands this past Saturday, I managed to (yet again) not make any time for lunch, so I went to Panera. They had a watermelon feta salad that was new on the menu and it looked so perfectly summery that I had to try it. It was delicious, but unfortunately I didn’t catch the barley that was in it just from looking at the photo at the drive through. I’m not super strict when it comes to the paleo diet, so I ate it anyway. I’m not sure what it is, but I’m finding that grains give me a headache, almost like a hangover. Not exactly what you want from what would appear to be a harmless salad.
So I decided to come up with my own version that is a little more paleo friendly. Plus feta cheese. Because honestly I have no idea what a paleo replacement for that would be (if you know of one then please help me out and leave a comment below).
Making The Salad
The base is just arugula with a few mint leaves torn up and mixed in. I then added some canned white beans as a source of protein. Sorry, I know beans aren’t technically paleo either but I have no problems with them. You could always switch it out for some grilled chicken. Pumpkin seeds, sunflower seeds, and slivered almonds (extra yummy if they’re toasted) add some crunch. Then you just cube up some watermelon and sprinkle a little feta on top (or don’t, it’s up to you).
And then you just drizzle with some olive oil and balsamic vinegar! It’s so yummy and refreshing on hot summer days. The best part about salads is that you don’t really need to measure anything out. Just sprinkle on however much you want/need! Who needs to pay $12 for the Panera watermelon feta salad when you can make your own? Eh?
